The New Inchcolm Hotel 

In late December 2016, I enjoyed a stay-cation at the iconic ‘The New Inchcolm Hotel’ – MGallery by Sofitel in Brisbane.

 

With roots dating back to 1880s when scientist, astrologer, psychologist and pioneering photographer Dr John Thomson chose the site for his personal residence, The New Inchcolm Hotel still maintains its historic old world charm with a blend of fine modern luxuries. Many of the building’s original features remain, including the grand silky-oak lined elevator which took me back to my days in Paris. One of my favourite things about this hotel was that each room, had its own unique look and feel, whether it be intricate details such as wallpaper texture to more obvious differences, like carpet and hard furnishings no space was the same.

 

A typical trait of all MGallery by Sofitel Hotels aside from being luxurious and boutique, is that each has their own local charm. As well as offering the opportunity to experience a different ‘Memorable Moment.’ The New Inchcolm’s Memorable Moment during my stay consisted of an intimate dining experience at the award-winning Thomson’s Reserve restaurant. With no menu to review Head Chef Anthony Hales served up a five-course degustation feast. We were then given the opportunity to provide feedback on each dish and help the team craft the following week’s menu.

 

Whilst I live in Brisbane, there was something so lovely about leaving home with only a weekend bag and a sketch book, to relax in this gorgeous setting for a couple of days. Sunday morning consisted of a sleep in, followed by the best baked eggs ever at the hotel, sketching in my room and then a stroll into the city for shopping and coffee. I arrived home Sunday evening feeling relaxed and refreshed having not even had to get onto a plane! Ready to sketch the classic white brickwork and greenery frontage of the hotel from my studio…
